Salmon with Summer Tomato Salsa
serves 4
Ingredients
- 4 ea salmon fillets, skin removed
- 1 C tomato, chopped
- 1/2 ea Hass avocado, chopped
- 1 cl garlic, crushed
- 1 T Balsamic vinegar
- 1 t olive oil
- 1/2 C corn kernals, cooked
- 1/4 C red onion, minced
- 1/4 C cilantro, chopped
- 1 ea lime, wedges
Instructions
- Combine all but the salmon and lime wedges, then refrigerate for 30 minutes.
- Bake the salmon at 325 until the fish flakes easily with a fork.
- Plate the salmon, garnish with the salsa and lime wedges, and serve.
- Option: chill the cooked salmon and then serve.
